5 Simple Dessert Recipes You Have to Try this Thanksgiving

These recipes aren’t just your average pumpkin pie; in many cases, they are both simpler and tastier!

Lemon Crème Cookies

One of the simplest recipes featured on this list, lemon crème cookies have the perfect balance of zest and sweetness. The thick icing between the lemon cookies gives it a satisfying texture that’s both creamy and crunchy. This recipe uses store-bought lemon cookies for even more simplicity.

Ingredients:

  • 3 tbsp. cups powdered sugar, sifted
  • ½ cup of heavy cream
  • 2 tbs lemon juice
  • ½ teaspoon vanilla extract
  • ½ tsp. zest from a lemon
  • 2 oz. softened cream cheese
  • ½ tsp. vanilla extract (optional)
  • 32 thin lemon cookies

Directions:

Using an electric mixer, beat the cream cheese until smooth. Then add in the lemon zest, lemon juice, vanilla extract, and powdered sugar until fully blended. As you blend the mixture, begin to slowly add the cream until it is homogenous. Once the cream is properly mixed, put about 2 tsp. of the mixture on a cookie and press another cookie on top. Repeat these steps to yield about 16 cookies.

Chocolate Covered Pecan Squares

These nutty, geometric desserts are perfect for Thanksgiving get-togethers. Rich and decadent, these treats might be one of the most intricate delights on the list, but the recipe is relatively straightforward and delicious enough to be worth the effort.

Ingredients for crust:

  • 4 ½ cups all-purpose flour
  • ½ tsp. baking powder
  • ¼ tsp. salt
  • 1 ¼ pounds unsalted butter, room temperature
  • ¾ cup granulated sugar
  • 3 extra-large eggs
  • ¾ tsp. pure vanilla extract

Directions:

Preheat the oven to 350 degrees. Beat granulated sugar and butter into bowl with an electric mixer; stir for about 3 minutes. Once the mixture is light and creamy, add the eggs and vanilla and mix well. Then mix together the dry ingredients—flour, baking powder, and salt. Once the mixture is thoroughly blended, press the dough evenly throughout an 18×12 inch pan. Keep in mind that you need to separate the edge of the dough from the pan. It will be sticky, so sprinkle flour on the dough and your hands. Once the dough is evenly spread, bake in the oven for 15 minutes or until it is firm and lightly browned.

Ingredients for topping:

  • 1 tsp. grated lemon zest
  • 1 tsp. grated orange zest
  • 2 pounds pecans (coarsely chopped)
  • ¼ cup heavy cream
  • 1-pound unsalted butter
  • 1 cup honey
  • 3 tbs. light brown sugar

Directions:

Combine the butter, honey, brown sugar, and zest in a large saucepan, stirring occasionally until the butter is melted. Bring to a boil for 3 minutes, and then remove from the heat. Mix in the pecans and cream, and then pour the mixture over the crust, being careful to keep the batter from going over the edges. After baking for 25-30 minutes (or until the filling is set), remove from the oven and allow it to cool. Wrap the pan in plastic wrap and refrigerate until cold.

Chocolate Covered Strawberries

An easy way to wow your guests, this delicious recipe looks gourmet and elaborate but only takes about 35 minutes to make. With just two ingredients, it doesn’t get any simpler than this.

Ingredients:

  • 4 coarsely chopped oz. of dark or milk chocolate
  • About 20 strawberries (rinsed and dried)

Directions:

Put the chopped chocolate in a glass bowl and microwave for 30-second intervals, stirring before putting it in the microwave each time. Once the chocolate is fully melted, begin to dip the strawberries in the liquid and then place them on a large baking sheet lined with wax paper. Place the pan in the fridge for at least 30 minutes to harden the chocolate, and then enjoy this sweet and simple recipe.
