Breezy and Easy Breakfast
Everyone loves breakfast burritos, but breakfast tacos are just as delicious. Next time you are craving Mexican food in the morning, try this recipe to start your day.
- 3 slabs of bacon, chopped and cooked until crispy
- 3 scrambled eggs
- 1 can of refried beans
- 1 can of canned tomatoes and green chilies, drained
- 1 package of taco seasoning
- 3 soft flour or corn taco tortillas
- Sour cream and hot sauce, to top
In a pot, add beans and taco seasoning. Stir together and warm through until heated. Place tortillas on a plate and assemble tacos. Smear 2 tablespoons of beans on the tortilla, then top with one egg, 1/3 of the bacon, and a tablespoon each of tomatoes and chilies. Top with a dollop of sour cream and hot sauce to taste.
Lovely and Light Lunch
Tostadas are delicious, and lucky for you, you can easily make them with a few convenience store items. This recipe for a light recipe for tuna tostada is sure to fix your afternoon hunger.
- 1 can of tuna
- ¼ cup of sour cream
- ½ an avocado, diced
- ½ teaspoon of lime zest
- Two wedges of lime
- Two soft-boiled eggs
- Two tostada shells
In a bowl, shred tuna and add the next three ingredients. Mix well and add salt and pepper, to taste. Place tostada shells on a plate, and evenly distribute tuna on the two tortillas and make an indent in the middle. Place one egg on each tostada, squeeze lime over the top, and season with salt and pepper to taste.
A Delightful and Decadent Dinner
On dark, winter nights, a hearty bowl of pasta can warm up the coldest of rooms which is why you should make this quick dinner. Rich with flavor, you will want to make the dish again and again.
- 1 box of macaroni or penne
- 1 cup of sour cream
- 1 cup of pasta sauce
- 1 sausage patty from a breakfast sandwich, cubed (keep the English muffin and egg for breakfast)
- ½ stick of butter
- ½ teaspoon of minced garlic
Cook the pasta according to the packaged instructions and drain. In a skillet over medium heat, add butter, garlic, and a sausage patty and stir until garlic is fragrant and butter is bubbling. Add sour cream and pasta sauce, stir to combine, and heat through. Once heated, add drained pasta, stir together. Top with chopped parsley or shredded parmesan cheese.
