  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • pinch of salt
  • 1 stick of softened, unsalted butter (½ cup)
  • ¾ cup sugar
  • 2 eggs
  • 3 teaspoons vanilla extract
  • ½ cup yogurt or milk
  • 1 cup blueberries
  • 1 cup raspberries

Streusel Topping:

  • 4 tablespoons sugar
  • 1 tablespoon flour
  • ½ teaspoon cinnamon


  1. Preheat oven to 400 degrees.
  2. Line a 12-cup muffin tin with paper muffin cup liners or lightly grease muffin tin cups with cooking spray.
  3. Whisk together the dry ingredients in a medium bowl, including flour, baking powder, and salt.
  4. In a separate bowl, beat eggs, butter, and sugar until light and fluffy.
  5. Add the dry ingredients to the mixture and beat until combined
  6. Pour mixture into the prepared muffin tin, and bake for 15-20 minutes or until a toothpick inserted in a muffin comes out clean.

No-Bake Red, White and Blueberry Cheesecake

Is the scorching July heat making it too hot to bake in the kitchen? Try this delicious and refreshing red, white and blue no-bake cheesecake recipe. Easy to prepare and a real crowd-pleaser, no one will suspect you didn’t spend hours in the kitchen baking up a storm! This simple recipe only has 8 ingredients and the colorful strawberries and blueberries make for a festive Fourth of July sweet treat.


  • 1 cup heavy whipping cream
  • 2 tablespoons lemon juice
  • 2 8 oz. containers plain cream cheese
  • ¾ cup sugar
  • 3 teaspoons vanilla extract
  • 1 cup blueberries
  • 1 cup sliced strawberries
  • 1 pre-baked graham cracker crust


  1. In a medium bowl, use an electric mixer to thoroughly blend together the whipping cream, lemon juice, cream cheese, ½ cup of the sugar, and vanilla extract.
  2. Sprinkle the sliced strawberries with the remaining ¼ cup of sugar and allow it to absorb the sugar for a few minutes.
  3. Pour the cream cheese mixture into the pre-baked graham cracker crust.
  4. Top with alternating circles of blueberries and sliced strawberries.
  5. Chill for a minimum of one hour, and then serve.

Bird Nests

Just like the Fourth of July, nothing is quite as American as apple pie! This twist on a tasty pastry favorite will have you out of the kitchen and out by the grill having fun with some outdoor baking! Bird Nests made on the grill are a fun way to combine grilling and an apple pie treat. Make it extra special by serving with a scoop of vanilla ice cream, a perfect complement to the graham cracker crust.


  • 6 medium-sized apples, peeled and cored
  • 4 tablespoons sugar
  • 2 tablespoons lemon juice
  • 2 tablespoons butter
  • ½ cup raisins
  • 2 teaspoons cinnamon
  • 1 teaspoon ginger
  • 1 teaspoon allspice
  • 1 container of refrigerated crescent roll dough
  • Additional sugar and cinnamon to sprinkle on apples


  1. Combine sugar, raisins, butter, cinnamon, ginger, and allspice until mixed well.
  2. Place each apple on a square of aluminum foil that is large enough to wrap around the apples.
  3. Sprinkle the apples generously with lemon juice, cinnamon and sugar.
  4. Stuff the core of each apple with the sugar and raisin mixture.
  5. Wrap each apple in crescent roll dough.
  6. Sprinkle dough-covered apples with cinnamon and sugar.
  7. Wrap tightly in aluminum foil and poke the top with a fork to let out steam.
  8. Place on the grill over medium-hot coals for approximately 30-40 minutes, or until the apples are soft and the dough is golden-brown.
  9. Enjoy with a scoop of vanilla ice cream!
